Estonian cinnamon pastries





 I really love all kinds of cinnamon baked goods, but this recipe, found quite by accident on the Internet, will always be my favorite!  Crispy sweet crust on the outside and soft, melting in the mouth, dough with an incredible smell of cinnamon on the inside.  It would seem that you won't surprise anyone with cinnamon rolls, but these pastries look so unusual that you can serve them both for a family dinner and for a festive table!

 Ingredients:

 ► Granulated sugar 76 g
 ► Milk 120 ml
 ► Dry yeast fast-acting 8 g
 ► Butter 80 g
 ► Wheat flour 300 g
 ► Salt ¼ tsp
 ► Egg yolk 1 pc.
 ► Vegetable oil 3 ml
 ► Ground cinnamon 2 tsp

 Cooking time: 3 hours
 Servings: 4

 Recipe:



 1.
 In warm milk, mix yeast with sugar (6g) and leave in a warm place for 10-15 minutes.  Add the amount of yeast following the instructions on the package.  Milk can also be replaced with water, as I have done several times, the taste remains almost unchanged

 Melt the butter (30g) and whisk with the egg yolk.  Add flour, salt (0.25 tsp) and yeast milk.
 Stir and knead the dough.

 Place the dough in a greased bowl and leave in a warm place for 1.5 hours.

 At this time, we will make the filling.  To do this, melt the butter and mix it with sugar and cinnamon.

 Roll out the dough 1 cm thick. Grease 2/3 of the filling.

 Roll the dough into a roll.  Lay with the seam down and press down a little to flatten the roll.

 Cut the roll lengthwise, not cutting to the end by 1-2 cm.

 Interlace the two halves of the roll.
