Chuck chuck
Ingredients:
- eggs 4 pcs.
- flour 350-400 g (depending on the flour, and on the size of the eggs)
- 1/3 tsp salt
- soda 0.5 tsp
- honey 1 cup
- sugar 1 cup
- almonds (or walnuts) for decoration
- vegetable oil for frying 1 l
The ingredients are given for one dish measuring 24-26 cm.
Cooking:
1. Pour flour onto a work surface, make a hole in it, and gradually pour eggs into it, whipped with salt and soda, kneading the dough. The dough should not be sticky and soft. Remove the kneaded dough into a bag for 15-20 minutes.
2. Divide the dough into 2 parts, and roll each part thinly on a table sprinkled with flour.
Remove rolled sheets to the side so that they dry out a little (10-15 minutes, and so that the draft does not get on them). But do not overdry. Otherwise, it will be difficult to chop later, the dough will be brittle.
3. Cut the rolled sheets into strips 5 cm wide. Fold the strips in half, and put three strips on top of each other, sprinkling a little with each other with flour (so that they do not stick together)
4. Cut thin noodles from strips, spread it on the table.
In a cauldron, heat vegetable oil, and fry the noodles in small batches (about a handful) quickly (over medium heat). Literally fry for 1-2 minutes, stirring a couple of times. As soon as the "noodles" got gilded, we immediately take them out with a slotted spoon and put them in a cup on a paper kitchen napkin so that it absorbs all the excess fat. Do not overcook the noodles, it should be a light golden color.
5. After the noodles have been fried, let's take syrup.
We prepare syrup in another dry cauldron, or any other thick-walled bowl.
Pour 1 tbsp into the cauldron honey and 1 tbsp. sugar, warm, bring to a boil, stirring constantly, let it boil for about three minutes, turn off the heat.
6. Dip the almonds into the hot honey with a slotted spoon and take it out in a separate bowl, the almonds will come in handy for decorating the chak-chak.
7. Remove paper napkins from a cup of fried noodles,
pour the noodles with hot honey syrup, and gently mix first with two wooden or silicone spatulas, then with your hands moistened with cold water. Mix gently so as not to smash or crush the "noodles". Do not burn yourself, the syrup is hot!
8. Sprinkle a plate with cold water on which you will spread the chuck-chuck. And quickly, until the syrup has cooled, put the chuck-chuck on a plate, forming a slide. It is important to do everything quickly, otherwise, if the syrup cools down nothing sticks together. When you form a hill, do not press it hard.
9. We immediately decorate with honey almonds. You can decorate with walnuts, raisins, multi-colored sweets (such as "pebbles"), some multi-colored topping, here is a full flight of imagination and a matter of taste.
We remove the ready-made chuck-chuck in the cupboard, and let it stand until the next day, so that it grasps well.
The chuck-chuck can stand for 1-2 weeks in a closet, without completely deteriorating, just remember to cover it with cling film.
