POTATO Gnocchi
INGREDIENTS:
● Potatoes - 1 kg.
● Wheat flour type “00” - 300 gr.
● Egg - 1 pc.
● Salt to taste
PREPARATION:
First of all, wash and boil the potatoes in a uniform until ready, peel the hot potatoes and grate them on a fine grater. Add 300 gr. flour, salt and egg. Knead not tight dough. Divide the dough into several parts, of which roll up harnesses 2–3 cm thick and cut gnocchi. Then give them a ribbed shape with a fork or with a special wooden device called riganokka. Boil the gnocchi in boiling, slightly salted water with olive oil. As soon as gnocchi float to the surface, you need to boil another 1 minute. Then take out with the help of skimmers and fill with your favorite sauce, gently stirring.
